Barbecued Beef Ribs

  1. 4-6 pounds beef back ribs (2 ribs/person)
  1. 11/2 cups beer
  2. 1/3 cup tomato paste
  3. 1/4 cup brown sugar
  4. 11/2 tablespoons Compliments Worcestershire sauce
  5. 2 cloves garlic, finely chopped
  6. 11/2 teaspoons paprika
  7. Salt and cracked black pepper


  1. Preheat oven to 400°F. Cut the ribs into sections. 
  2. To make the marinade,combine beer, tomato paste, sugar, Worcestershire sauce, garlic, paprika,salt and pepper in a large bowl. 
  3. Add ribs and mix to coat well. 
  4. Cover and set aside in the refrigerator for 30 minutes to marinate.
  5. Remove the ribs from the marinade, reserving marinade, and place on wire racks in 2 baking trays. 
  6. Roast for 20 minutes.
  7. Place marinade in a small saucepan over high heat and simmer for 5 minutes or until thickened. 
  8. After roasting for 20 minutes, brush the ribs with hot marinade and roast for another 10 minutes.
  9.  Repeat 3 times at 10-minute intervals or until well browned. 
  10. Serve with roasted potato wedges and remaining marinade.
