Method
- Step 1
- Place potatoes in a pot of cold water, bring to a boil and simmer until fork-tender, about 15 minutes. Drain and set aside.
- Step 2
- Heat oil in a skillet over medium-high heat. Add onion and sauté until tender, about 2 minutes. Stir in potatoes, peas and 2 tbsp (30 mL) water. Cook, stirring, until heated through, about 5 minutes.
- Step 3
- Divide potato mixture evenly between tortillas, wrap and serve.
