Preheat oven to 375°F. Separate crescent roll dough into 8 pieces.
Using 2 pieces at a time, squish dough together to form 4 balls of dough.
On a lightly floured board, roll balls out to form 4 rounds, each about 7 inches in diameter. Spread rounds with equal amounts of pizza sauce then sprinkle equally with cheese.
Top cheese with equal amounts of sopressata, spreading it out to cover each round. Then top with turkey slices.
Gently fold each round over to from a turnover shape, but do not seal the edges.
Carefully transfer to a baking sheet. Bake until well-browned and sizzling, 13-15 minutes.
Let sandwiches cool slightly. In a small bowl, toss together lettuce and dressing.
Just before serving, gently open each turnover by lifting open edge up a little bit. Tuck equal amounts of salad mixture inside each sandwich and serve immediately.
(If you have kids who aren’t wild about greens in their sandwiches, omit the spring mix and dressing.)
