Mediterranean Chicken With Hummus and Pita

  1. 11/2 pounds boneless skinless chicken breasts, cut into 11/2 inch chunks
  2. 2 tablespoons fresh lemon juice
  3. 1 tablespoon Sensations Extra Virgin 100% Olive Oil
  4. 3/4-1 teaspoon ground cumin
  5. salt and freshly ground pepper
  6. 1 container (7 ounces) Compliments Traditional Hummus
  7. 4 pita breads, cut in half crosswise


  1. Preheat oven broiler to high.
  2. In a bowl, mix together chicken, lemon juice, olive oil, cumin, and salt and pepper to taste. Let stand 5 minutes.
  3. Thread chicken equally onto 4 metal skewers. Place skewers on a rack in a broiler pan.
  4. Broil chicken 4 inches from heat until tops are lightly browned, about 5 minutes.
  5. Carefully turn skewers over and broil until other sides are lightly browned and meat is no longer pink in center (cut to test), 4-5 minutes more.
  6. Carefully slide meat off skewers onto 4 dinner plates. Divide hummus and pitas between plates, spoon chicken and hummus into pita.
