Ingredients
- 1 1/2 pounds
- boneless skinless chicken breasts, cut into 11/2 inch chunks
- 2 tbsp
- fresh lemon juice
- 1 tbsp
- Sensations Extra Virgin 100% Olive Oil
- 3/4-1 tsp
- ground cumin
- salt and freshly ground pepper
- 1
- container (7 ounces) Compliments Traditional Hummus
- 4
- pita breads, cut in half crosswise
Method
- Step 1
- Preheat oven broiler to high. In a bowl, mix together chicken, lemon juice, olive oil, cumin, and salt and pepper to taste. Let stand 5 minutes.
- Step 2
- Then thread chicken equally onto 4 metal skewers. Place skewers on a rack in a broiler pan.
- Step 3
- Broil chicken 4 inches from heat until tops are lightly browned, about 5 minutes. Carefully turn skewers over and broil until other sides are lightly browned and meat is no longer pink in center (cut to test), 4-5 minutes more.
- Step 4
- Carefully slide meat off skewers onto 4 dinner plates. Divide hummus and pitas between plates, spoon chicken and hummus into pita.
