boneless skinless chicken breasts, cut into 1 1/2 inch chunks
fresh lemon juice
Sensations Extra Virgin 100% Olive Oil
3/4 -1 tsp
salt and freshly ground pepper

Preheat oven broiler to high.
In a bowl, mix together chicken, lemon juice, olive oil, cumin, and salt and pepper to taste. Let stand 5 minutes.
Thread chicken equally onto 4 metal skewers. Place skewers on a rack in a broiler pan.
Broil chicken 4 inches from heat until tops are lightly browned, about 5 minutes.
Carefully turn skewers over and broil until other sides are lightly browned and meat is no longer pink in center (cut to test), 4-5 minutes more.
Carefully slide meat off skewers onto 4 dinner plates. Divide hummus and pitas between plates, spoon chicken and hummus into pita.
