Ingredients

lemons
2 tbsp
Sensations Extra Virgin 100% Olive Oil
2 tbsp

Compliments Balance Boneless Skinless Chicken Breasts
1/2 tsp
minced or chopped garlic or 1 small clove garlic, minced
2 tbsp
capers, drained, optional

Method

Step 1
Cut 3 thin slices off one end of lemon; cut each slice in half and set aside.
Step 2
Squeeze remaining lemon and measure 2 tablespoons of juice.
Step 3
In a large skillet over medium high heat, heat olive oil and butter until melted.
Step 4
Add chicken, sprinkle with salt and pepper and cook for 5 minutes.
Step 5
Turn chicken and cook 5 more minutes or until cooked through.
Step 6
Remove chicken and place on plate.
Step 7
Add lemon juice, lemon slices, garlic and capers to drippings in pan. Cook stirring for 2 minutes.
Step 8
Spoon over chicken and serve.
