Ingredients

  • 1/4 cup (60 mL) olive oil
  • 2 tbsp (30 mL) honey
  • 2 tbsp (30 mL) lime juice
  • 1/2 tsp (2 mL) chili powder
  • 1/2 tsp (2 mL) ground cumin
  • pinch cayenne pepper
  • 2 large, ripe avocados, peeled, pitted, cut into small cubes
  • 24 cherry tomatoes, each halved
  • 1/2 English cucumber, quartered lengthwise, cut into ½-in./1-cm slices
  • 1/4 cup (60 mL) chopped fresh cilantro or mint
  • salt and black pepper to taste

Method

  1. In large bowl, mix oil, honey, lime juice, chili powder, cumin and cayenne. Add the avocado and gently toss to coat. Add the tomatoes, cucumber, cilantro or mint. Season with salt and pepper. Gently toss before serving.
