Watermelon, Lime & Tajin Shaved Ice
This one passes the vibe check. A grater plus frozen watermelon chunks are nearly all it takes to make this iced dessert, but a little extra flavour makes it pop. We like lime juice and tajin for a sweet, sour and spicy kick.
Let us show you the way: Slice one small to medium watermelon in half. Reserve half for another use. Place cut-side down on cutting board. Slice vertically across at 2-inch intervals. Repeat across the melon horizontally to create sticks. Freeze in a single layer overnight. Using a box grater or microplane, grate 2-3 sticks of frozen watermelon into a serving bowl. Garnish with lime wedge and a sprinkle of tajin. Repeat with remaining frozen watermelon.
