Ingredients

  • 3 medium yams (about 3-in./8-cm diameter each)
  • 3 tbsp (45 mL) honey
  • 3 tbsp (45 mL) melted butter
  • 2 tbsp (30 mL) lemon juice
  • 1/4 tsp (1 mL) ground cinnamon
  • pinch each ground cloves, ginger and nutmeg
  • salt and pepper to taste
  • 1 tbsp (15 mL) finely chopped fresh parsley

Method

  1. Preheat oven to 325°F (160°C). Prick each (unpeeled) yam several times with a fork and set on parchment paper-lined baking sheet. Bake until just tender, about 1 hr. Cool until comfortable to handle. Slice yams into 1/2-in. (1-cm) thick rounds; set back on lined baking sheet.
  2. In bowl, mix honey, butter, lemon juice, cinnamon, cloves, ginger, nutmeg, salt and pepper. Brush on yams. (Make-Ahead: Yams can be prepared to this point several hours in advance and kept chilled until ready to bake).
  3. Bake yams, uncovered, 20 min., or until hot. Sprinkle with parsley to serve.
