Ingredients

  • 2 eggs, beaten
  • 1/4 cup (60 mL) all-purpose flour
  • 1/4 cup (60 mL) butter, melted
  • 2 tbsp (30 mL) finely chopped fresh sage
  • 2 cloves garlic, minced
  • 1/4 tsp each salt and pepper
  • 1 bag (1 kg) Compliments Hash Brown Fried Potatoes, thawed
  • 1/2 cup (125 mL) grated Parmigiano Reggiano cheese
  • 2 tbsp (30 mL) chives

Method

  1. In large bowl, whisk together melted eggs, flour, butter, sage, garlic, salt and pepper. Add hash brown potatoes and cheese; toss to coat.
  2. Preheat waffle iron according to manufacturer’s instructions. Making one waffle at a time, place one scant cup of potato mixture onto to waffle iron. Close lid; cook 4 to 5 min., or until hash browns are golden brown and crisp. Make about 8 waffles. Garnish with chives and a dollop of sour cream, if desired.

Tips: Keep waffles warm in low oven. Also, serve as a brunch topped with poached egg, a dollop of cream cheese, smoked salmon and dill.
