Vegan Banana Pecan Pancake Gift Jar

  • 1 1/2 cups (375 mL) whole-wheat flour
  • 2 tbsp (30 mL) lightly packed brown sugar
  • 2 tsp (10 mL) baking powder
  • 1/4 tsp (1 mL) each ground nutmeg and salt
  • 1/3 cup (75 mL) lightly crushed banana chips
  • 1/3 cup (75 mL) chopped toasted pecans
  • 4 tsp (20 mL) flax meal


  1. To make flour mixture for pancakes, in bowl, whisk together flour, brown sugar, baking powder, nutmeg and salt.
  2. In 2-cup (500-mL) Mason jar or tall, narrow re-sealable container, layer ingredients in the following order: half the flour-mixture, banana chips, pecans, flax meal and remaining flour-mixture. Seal with lid. Decorate with festive ribbon or string, tag and recipe for Vegan Banana Pecan Pancakes.
