Ingredients

  • 2 tbsp (30 mL) vegetable oil
  • 3 yellow cooking onions, thinly sliced
  • 2 cloves garlic, finely chopped
  • 1/4 tsp (1 mL) each salt, pepper and sugar
  • 1/3 cup (75 mL) Sensations by Compliments 100% Pure Canadian Maple Syrup
  • 1/3 cup (75 mL) Compliments red wine vinegar
  • 2 tsp (10 mL) Worcestershire sauce
  • 1 tsp (5 mL) each finely chopped thyme and rosemary
  • 2 tbsp (30 mL) finely chopped fresh parsley

Method

  1. Heat oil in large cast-iron skillet set over medium heat. Stir in onions, garlic, salt, pepper and sugar. Cook 15 to 20 min., or until onions are golden brown. Stir in maple syrup, vinegar, Worcestershire sauce, thyme and rosemary; bring to a simmer. Cook 10 to 15 min., or until liquids thicken to jam-like consistency. Remove from heat. Stir in parsley.
  2. Serve on burgers, steak, sausages or in grilled cheese sandwiches. (Cooled onion jam can be stored in the fridge in a sealed container up to 2 weeks).
