
Turkey Cheese and Avocado Quesadillas

8 flour tortillas
¾ pound Compliments Roasted Turkey
½ pound Smoked Fontina Cheese, thinly sliced or shredded
1 firm-ripe avocado
2 tbsp Compliments Butter, meltedSalsa Fresca

Directions
1Preheat oven to 450°F. Lay 4 tortillas out on a work surface. Top with equal amounts of turkey and cheese, spreading them out to tortilla edges.
2Pit, peel, and thinly slice avocado. Divide slices equally among tortillas. Top with remaining tortillas.
3Evenly brush both sides of each quesadilla with butter. Arrange quesadillas on 2 baking sheets.
4Bake until tortillas are browned and crisp and cheese is melted, 8-10 minutes. Switch racks during baking if necessary for even browning.
5Using a pizza cutter or large sharp knife, cut quesadillas into wedges and transfer to plates. Serve with Salsa Fresca to taste.
