Ingredients

Compliments Original Complete Pancake & Waffle Mix
(or Compliments Buttermilk Complete Pancake & Waffle Mix)
250 mL
1/3 cup
Compliments Peaches & Cream Corn (Frozen Foods)
75 mL
1/4 cup
crumbled feta cheese
60 mL
3 tbsp
finely chopped green onion
45 mL
1 tsp
ground chipotle pepper
5 mL
1 tsp
onion powder
5 mL
1/4 tsp
salt
1 mL

Method

Step 1

In a bowl, use a whisk to mix together pancake mix and 2/3 cup (150 mL) water until smooth.

Step 2

Mix in corn, feta cheese, green onion, chipotle pepper, onion powder and salt.

Step 3

Cook pancakes in skillet according to package instructions. Serve with salsa, if desired.

Tips

Frozen ingredients can be added to the batter either frozen or thawed.
For gluten-free pancakes, use Compliments Gluten-Free Pancake & Waffle Mix. Mix batter according to package directions. For every 1 cup (250 mL) of mixed gluten free batter, use recipe's ingredient add-ins.
