Sweet Potato Chili Recipe

1 pure olive oil
2 onion, diced
1 carrot, diced
1 celery, diced
1 minced garlic
3 jalapeno pepper ,diced
1 green pepper, diced
4 diced sweet potato
1 Diced Tomatoes
1 Six Bean Blend , drained and rinsed
½ Paprika
1 Chili Powder
1 Cumin
½ salt
¼ ground black pepper

Directions
1In a large sauté pan (straight sided pan) on medium-high heat, add the oil. When it is hot, add in the onions and cook for 5 min. Add in the carrot, celery, garlic, green pepper and jalapeno pepper cook for 5 min. Add the sweet potatoes, and tomatoes and bring to a boil. Add the beans and spices bring to a boil then reduce to a simmer. Simmer for 40 min. or longer if you want a thicker sauce.
