1 ⅓ pounds ground beef
Salt and freshly ground pepper
2 cans Compliments Black Beans, drained and rinsed
¾ cup Tomato Salsa
1 ½ cups Sensations Shredded Tex Mex Cheese
½ cup Lucerne® Regular or Light Sour Cream
3 green onions, ends trimmed, finely chopped
3 to 4 Roma tomatoes, cored and finely chopped
1 bag Compliments White Corn Tortilla Chips

1 ½ cups Sensations Shredded Tex Mex Cheese
½ cup Lucerne® Regular or Light Sour Cream
3 green onions, ends trimmed, finely chopped
3 to 4 Roma tomatoes, cored and finely chopped
1 bag Compliments White Corn Tortilla Chips
Directions
1Preheat oven broiler to high. Place beef in a 12 or 14-inch frying pan over medium high heat.
2Add salt and pepper to taste. Stir often until meat is browned and cooked through, 6-8 minutes.
3With a slotted spoon, transfer meat to a paper towel lined plate to drain. Wipe pan clean.
4Add black beans and salsa to the pan. Stir over medium-high heat just until heated through, about 2 minutes.
5Spoon bean mixture into a deep 9-inch pie dish or baking pan.
6Top with meat and cheese. Broil 4-6 inches away from heat until cheese is bubbling and lightly browned, 3-4 minutes.
7Watch carefully to avoid burning the cheese.Remove dish from oven and top with sour cream, green onions, and chopped tomatoes.
8To serve, spoon portions out into bowls or on plates with tortilla chips.
Tips
1
For a lower fat option, use ground turkey breast instead of ground beef.
