- loosely packed arugula, washed and thoroughly dried

Method
- Step 1
- In a large bowl, combine the strawberries, olive oil, vinegar, salt and pepper.
- Step 2
- Add arugula and mint to strawberry mixture. Gently toss to combine and serve immediately.
