
Sticky Date Pudding Bars

15 Medjool dates

Directions
1Preheat oven to 180°C (350˚ F). Line an 8 X 8 in. (20 X 20 cm) baking pan with parchment paper. Set aside.
2Pit the dates, if necessary. Roughly chop, place in a heatproof bowl and sprinkle with the baking soda. Pour 1 cup (250 mL) just-boiled water overtop, let stand 10 min.
3Meanwhile, in a large bowl, use a handheld electric mixer to beat the butter and brown sugar together until smooth and fluffy. Beat in the eggs until fully incorporated.
4Add the flour and baking powder all at once to the butter mixture; fold in the dry ingredients until just incorporated. Without draining the soaked dates, mash to a lumpy paste. Add all at once to the batter and fold in until just incorporated.
5Scrape the batter into the prepared baking pan, smoothing into an even layer. Bake 35 min., or until a skewer inserted into the center comes out clean. Cool slightly before cutting into 10 bars. If desired, serve with warm butterscotch sauce or vanilla ice cream.
