
Korean-Style Spicy Grilled Pork Belly

This spicy, sweet yet savoury recipe is styled after traditional grilled Korean pork belly recipes. Make it at home by either grilling or stir-frying thinly sliced pork belly in this bold, umami-rich marinade.
⅓ cup gochujang (Korean hot pepper paste)
¼ cup soy sauce
¼ cup granulated sugar
6 cloves garlic, finely chopped
3 tbsp rice wine (Korean or Chinese)
3 tbsp sesame oil
2 tbsp gochugaru (Korean chili powder)
2 tbsp minced ginger
1 tbsp toasted sesame seeds
¾ tsp freshly ground black pepper
2 lbs thinly sliced pork belly (1/8-inch thick, rind removed)
5 green onions, cut into 2-inch pieces
1 large onion, cut into ½-inch thick slices
Lettuce, for serving
Cooked rice, for serving
Prepared kimchi, for serving

Directions
1In a large bowl, stir together gochujang, soy sauce, sugar, garlic, rice wine, sesame oil, gochugaru, ginger, sesame seeds, and black pepper until smooth.
2Wearing gloves, add pork and massage until well covered. Add green onions and sliced onion, turning to combine. Cover and refrigerate for at least 1 hr., or overnight.
3Preheat a clean, oiled grill to medium-high heat.
4Cook pork 3 to 5 min., flipping halfway, until cooked through (160ºF / 71ºC) and slightly charred and caramelized. Transfer to a serving platter; sprinkle with more sesame seeds (if desired) and green onion. Serve.

This pork belly recipe is traditionally grilled or pan-fried; you can also use pork shoulder or pork butt instead of pork belly. Enjoy like a Korean as ssam; build the grilled pork on a small piece of leaf lettuce topped with a small spoonful of cooked rice and kimchi. Fold all corners and wrap into a little umami-loaded flavour packet.

Gochugaru is sun-dried Korean chili powder or flakes that is subtly smoky and a vibrant red. Don’t substitute with regular chili flakes; for 1 tbsp gochugaru, substitute 2 tsp sweet paprika mixed with ½ tsp cayenne pepper.
