
Quick Minestrone Soup

½ pound Smoked Sausage (pork and beef)
1 onion, chopped
1 tbsp Sensations Extra Virgin 100% Olive Oil
6 cups Compliments Beef Broth
1½ cups Compliments Small Elbow Macaroni
1 can white beans (cannellini), drained and rinsed
¼ cup Compliments Pesto Sauce
2 ounces baby spinach leaves, washed and dried
Compliments Shredded Parmesan Cheese (optional)

1½ cups Compliments Small Elbow Macaroni
1 can white beans (cannellini), drained and rinsed
¼ cup Compliments Pesto Sauce
2 ounces baby spinach leaves, washed and dried
Compliments Shredded Parmesan Cheese (optional)
Directions
1Cut sausage crosswise into 1/4-inch thick slices, then cut slices in half crosswise.
2In a 5 to 6-quart pan over medium-high heat, combine sliced sausage with onion and olive oil.
3Stir often until onion is softened and mixture is lightly browned, 5-6 minutes.
4Add broth and macaroni to pan.
5Bring to a boil over high heat; then reduce heat, cover, and simmer until macaroni is tender to bite, about 10 minutes.
6Add beans and pesto sauce to pan.
7Cook uncovered, stirring occasionally, until beans are heated through, 2-3 minutes. Stir in spinach.
8Cook just until spinach wilts but is still bright green, about 1 minute.
9Ladle soup into serving bowls. If desired, offer cheese to add to taste.

Healthier Alternative: Lower the fat and increase fiber by using turkey polska kielbasa instead of smoked sausage and Compliments Balance Whole Wheat Penne Rigate instead of elbow macaroni.
