Ingredients

  • 2 cups drained sauerkraut
  • 4 radishes, sliced into matchsticks
  • 1/4 cup finely chopped cilantro
  • 1 tbsp grated fresh ginger
  • 2 tsp grated or minced garlic
  • 2 tsp sugar
  • 1 tsp paprika
  • 1 tsp chili garlic sauce (or more to taste)
  • 1 tsp fish sauce

Method

  1. In large bowl, mix together sauerkraut, radishes, cilantro, ginger, garlic, sugar, paprika, chili garlic sauce and fish sauce.
  2. Transfer mixture to glass jar with tight-fitting lid. Keep refrigerated. Use within 2 weeks.

Tip
  • The longer you leave this kimchi-style sauerkraut in the fridge, the more intense the flavour becomes.
