Ingredients

  • 2 cans (398 mL each) Compliments Pineapple Tidbits in Pineapple Juice
  • 2 tsp (10 mL) lime zest
  • 2 tbsp (30 mL) lime juice
  • 1/4 cup (60 mL) Compliments Shredded Sweetened Coconut, toasted

Method

  1. Pour pineapple tidbits, including the juice, into. 8-in. (20-cm) square metal pan or a similar-size freezable container. Stir in lime zest and lime juice. Cover and freeze 1 1/2 to 2 hr., until almost frozen through.
  2. Transfer mixture to food processor; pulse until just slushy.
  3. Divide among 4 serving bowls. Sprinkle with toasted coconut.

Tips

  • Substitute coconut with toasted sliced almonds.
