
Pan Seared Halibut with Cherry Tomatoes

2 Halibut, if frozen thaw according to package directions
salt and freshly ground pepper
3 tbsp Sensations Extra Virgin 100% Olive Oil
cherry tomatoes (use a mixture of colours or all one colour as desired)

Directions
1Pat halibut steaks dry with a paper towel.
2Season to taste with salt and pepper.
3Heat 2 tablespoons oil in a 12 or 14-inch nonstick frying pan over high heat.
4When pan is hot, add fish and cook until undersides are browned, about 4 minutes.
5Using a spatula, carefully turn fish over and cook until other side is brown and fish is no longer translucent in center (cut to test), about 3 more minutes.
6Gently transfer fish to a serving platter and keep warm.
7To pan add remaining oil and tomatoes.
8Stir or shake over high heat just until tomatoes begin to soften and exude juice, 1-2 minutes.
9Pour tomatoes and pan juices over halibut and serve immediately.
