- In separate bowls, soak dates and cashews at least 2 hr. and up to overnight.
- Reserving soaking liquids, drain dates and cashews. Place dates, cashews, coconut milk and vanilla into blender or food processor; puree until smooth. Thin with 1 to 2 tbsp (15 to 30 mL) reserved soaking liquids, if needed, for dipping sauce texture.
- Serve with fruit such as strawberries, pineapple, cantaloupe, banana or kiwi.
Eat leftover sauce with yogourt or add into smoothies.
