Irish Cheddar Log With Walnuts

1 pkg Compliments Light Cream Cheese Spread, at room temperature
2 cups shredded Irish Cheddar cheese
¼ cup minced red onion
2 tbsp chopped fresh parsley
1 tsp prepared horseradish
1 pinch each salt and pepper
1 pkg walnut pieces, chopped
1 pkg Compliments Light Cream Cheese Spread, at room temperature
2 cups shredded Irish Cheddar cheese
¼ cup minced red onion
2 tbsp chopped fresh parsley

1 pkg walnut pieces, chopped
Directions
1In a large bowl, beat cream cheese with an electric mixer until fluffy. Mix in Cheddar cheese, onion, parsley, horseradish, salt and pepper.
2Lightly dampen hands with cold water; shape cheese mixture into log about 2 inches (5 cm) in diameter.
3Spread walnuts on a plate; roll log in walnuts, gently pressing to adhere. Wrap in plastic wrap and refrigerate for 2 hours, or up to 24 hours.
