The star of dinner, grilled in under 10 minutes! Wow weekend guests with this easy sockeye salmon recipe, or make the cowboy butter recipe in advance and watch a weeknight meal waltz to the table with hardly any effort.

  • Cowboy Butter

  • 8 tbsp unsalted butter, softened, divided

  • ¾ tsp smoked paprika

  • 1 tsp chili flakes

  • 2 tbsp chopped parsley

  • 1 tbsp lemon juice (optional)

  • 2 ½ tsp Dijon mustard

  • 2 cloves garlic, minced

  • Salmon

  • 2 tbsp olive oil

  • 6 sockeye salmon fillets with skin (5 to 6 oz/150 to 175 g each)

  • 1 ½ tsp kosher salt

  • 1 tsp freshly ground black pepper

Tips

Optional additions: ¼ tsp dried rosemary or thyme to the butter mixture.

The lemon juice may cause the butter to separate slightly, it won’t matter when pressed into a log.
