small heads of radicchio, cut into 6 wedges

olive oil

Sensations by Compliments Aged Balsamic Vinegar of Modena
30 mL
1 tbsp
drained capers
15 mL
1/8 tsp
each salt and pepper
0.5 mL
1 tbsp
parsley
15 mL

Method

Step 1
Preheat barbecue to medium-high. Lightly brush radicchio wedges with 1 tbsp (15 mL) olive oil.
Step 2
Grill wedges until slightly charred and soft, about 3 min. per side. Transfer to a bowl, toss with 1 tbsp (15 mL) olive oil, balsamic vinegar, capers and salt and pepper. Garnish with parsley.
