Ingredients

  • 2 medium eggplant, each cut lengthwise into 4 or 5 thick slices
  • 1/4 tsp (1 mL) salt
  • 4 tsp (20 mL) fresh lemon juice
  • 4 tsp (20 mL) honey
  • 2 tsp (10 mL) olive oil 10 mL
  • 2 tsp (10 mL) chopped fresh thyme leaves

Method

  1. Heat barbecue to medium. Grill eggplant until golden, up to 5 min. per side. Transfer to a platter. Sprinkle with salt. Drizzle with lemon juice, honey and olive oil. Garnish with thyme.
