¼ tsp black pepper
1 lemon, zested and juiced
2 tsp cracked black pepper
1 Pkg Compliments Alfredo Sauce
1 cup finely grated Pecorino Romano cheese
2 tbsp finely sliced chives
Directions
1Preheat a clean, oiled grill to medium-high heat. Lightly brush chicken kabobs with olive oil and season with salt and pepper. Grill kabobs, turning occasionally, until lightly charred and fully cooked through to 165°F (74°C), about 10 to 12 min. Remove from the heat and let rest briefly. Finish kabobs with fresh lemon juice and most of the lemon zest.
2Meanwhile, toast cracked black pepper in a small, dry saucepan over low heat, stirring until fragrant, about. 30-45 sec. Add Alfredo sauce and warm gently, stirring often without bringing to a boil, about 3 to 5 min.
3Remove saucepan from heat and whisk in cheese a little at a time until smooth. Whisk in 1/3 cup (80 mL) of hot water into the sauce, until glossy, smooth and the consistency has thinned slightly. Finish the cacio e pepe sauce with half of the finely sliced chives.
4Transfer the grilled chicken kabobs to a platter. Serve with the sauce on the side or lightly spooned over top. Garnish with the remaining chives and lemon zest. Serve.
