Ingredients

  • 1 1/4 cups whole-wheat flour 300 mL
  • 1 cup all-purpose flour 250 mL
  • 2 tbsp brown sugar 30 mL
  • 1 1/2 tsp baking powder 7 mL
  • 1 tsp baking soda 5 mL
  • 2 tsp each ground cinnamon and ground ginger 10 mL
  • 1/4 tsp each salt, ground nutmeg and ground cloves1 mL
  • 1 1/2 cups buttermilk 375 mL
  • 3 eggs
  • 1/4 cup 100% Pure Fancy Molasses 60 mL
  • 1/4 cup butter, melted 60 mL

Method

  1. In a bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, ginger, salt, nutmeg and cloves. Set aside. In another bowl, whisk together buttermilk, eggs, molasses and butter. Pour buttermilk mixture into flour mixture and stir until well combined.
  2. Fill a greased waffle iron with approx. 1/2 cup (125 mL) of batter per waffle. Cook until golden and cooked through, about 3 min. per waffle. Repeat until all batter is used up. Serve with Pure maple syrup.

Tip
Make ahead: Mix up your batter and refrigerate the night before. Bring to room temperature before using.
