- Combine coffee, almond beverage, cinnamon, ginger, nutmeg and vanilla in a medium saucepan. Bring to boil over medium heat. Stir in honey, if using.
- Pour coffee mixture into 6 small heatproof mugs. Garnish each drink with a cinnamon stick and pinch of nutmeg.
- Add 2 tbsp (30 mL) spiced rum to each mug before filling with coffee mixture.
- To make Spiced Gingerbread Mocha Affogato, spoon vanilla soy ice cream into individual glass tumblers. Top each with 1/2 cup (125 mL) hot Gingerbread Almond Latte.
