
Fully Loaded Maple-BBQ Pork Side Ribs

Not to brag, but these might be some of the best pork side ribs to ever grace your grill. Draped in maple BBQ sauce and piled with crisp Hickory Potato Sticks and fresh green onions – these ribs are so good, you’re going to wonder if one rack is enough.
Pork Side Ribs
1 rack pork side ribs, fat trimmed
1 tsp salt
Maple BBQ Sauce
1 cup ketchup
6 tbsp maple syrup
¼ cup water
3 tbsp apple cider vinegar
1 tbsp concentrated tomato paste
1 tsp soy sauce
1 tsp Worcestershire sauce
½ tsp garlic powder
½ tsp onion powder
¼ tsp salt
Toppings
⅓ cup Compliments Hickory Potato Sticks
1 green onion, thinly sliced on the bias
Pork Side Ribs
1 rack pork side ribs, fat trimmed

Directions
1Pork Side Ribs: Position the oven rack in the centre position. Preheat oven to 325°F (163°C).
2Pat ribs dry with paper towel. Season all over with salt. Wrap rack tightly with aluminium foil, then set on a large, rimmed baking sheet. (It’s ok if ribs overhang slightly).
3Bake on centre rack, 2 hrs to 2 hrs 15 min, until ribs are very tender but not yet falling off bone.
4Maple BBQ sauce: Combine ketchup with maple syrup, water, vinegar, tomato paste, soy, Worcestershire, garlic and onion powders and salt in a medium saucepan. Bring just to a simmer over medium-high heat, then reduce to medium-low and cook for 5 min. Reserve one-third for finishing ribs.
5Preheat grill to medium-high.
6Carefully unwrap foil and remove ribs (steam will escape packet). Discard juices.
7Oil grate, then reduce heat to medium. Grill ribs, with lid closed, turning and basting with BBQ sauce mixture often, 8 to 10 min. or until meat is browned and layered with sauce. Transfer to a cutting board to rest for 5 min.
8Cut between bones to segment ribs and brush with reserved BBQ sauce mixture, if desired. Transfer to a platter and sprinkle with Hickory Sticks and green onions to garnish. Serve immediately.
