Ingredients

  • 1 cup (250 mL) finely crushed Sensations by Compliments Chunky Chocolate
  • Chip Cookies (blitzed in processor)
  • 3 tbsp (45 mL) unsalted butter, melted
  • 8 oz (250 g) brick-style plain cream cheese
  • 1/4 cup (60 mL) packed brown sugar
  • 1/4 cup (60 mL) peach or apricot jam
  • 4 cups (1 L) chopped peaches (about 3 large peaches)

Method

  1. Preheat oven to 180 C (350 F). Toss together cookie crumbs and melted butter; press into bottom and halfway up sides of 9 in. (23 cm) pie pan. Bake 10 min. Cool completely on wire rack.
  2. Meanwhile, beat cream cheese with brown sugar until light and fluffy. Spread into pie crust. Chill 1 to 2 hr. until firm.
  3. Warm jam in microwave or small saucepan set over medium-low heat until runny. Cool slightly; toss with peaches to coat. Mound in pie shell. Serve immediately.
Tip:
Use a pre-made graham or chocolate cookie crust.
