Ingredients

  • 2 tbsp (30 mL) canola oil
  • 2 peppers, diced (green or red)
  • 1 onion, diced
  • 2 tbsp (30 mL) taco seasoning
  • 1 can (19 oz) no salt added black beans, drained and rinsed
  • 1 cup (250 mL) diced tomatoes
  • 4 Compliments 100% Whole Grain Whole Wheat Tortillas
  • 1 1/3 cups (325 mL) Sensations by Compliments Triple Cheddar Shredded Cheese Blend
  • 1/2 cup (125 mL) Compliments Guacamole (optional)
  • 1/2 cup (125 mL) salsa (optional)
  • 1/2 cup (125 mL) sour cream (optional)

Method

  1. Heat oil in large skillet over medium heat. Add peppers, onion and taco seasoning; cook 5 min. until veggies soften. Stir in black beans, tomatoes and 1/4 cup (60 mL) water; cook about 10 min. until mixture is still moist but no excess liquid remains.
  2. Spread bean mixture onto tortillas, leaving 1-in. (2.5-cm) border. Top with cheese. Fold edge of tortilla over filling, fold in sides, roll up to enclose filling. Make 4 burritos. Serve with guacamole, salsa and sour cream, if desired.
Tip:
Add rotisserie chicken, cooked ground beef or leftover quinoa for added protein.
For crisp burritos, brush tortillas lightly with oil. Place on heavy skillet or grill pan over medium heat; about 3 min. per side until golden.
