
Corn Ribs with Maple Glaze and Miso Butter

Sure, they’re not a rack of ribs, but with their sweet sauciness and crunchy edge – they’re the only way we want to eat fresh corn this season. (Serve alongside ribs if desired – but don’t forget the napkins!)
¼ cup Compliments Unsalted Butter, melted
2 tbsp white miso paste
¼ cup + 1 ½ tsp maple syrup, divided
1 tsp finely grated fresh garlic
1 ½ tbsp apple cider vinegar
1 tbsp soy sauce
1 tsp smoked paprika
6 cobs corn, freshly shucked
2 tbsp canola oil
¾ tsp salt
¼ cup finely sliced green onions
½ tsp sesame seeds
¼ cup Compliments Unsalted Butter, melted

1 tsp smoked paprika

2 tbsp canola oil
¾ tsp salt
¼ cup finely sliced green onions
½ tsp sesame seeds
Directions
1Preheat clean, oiled grill to medium-high heat. Whisk together melted butter, miso paste, 1 ½ tsp (7 mL) of maple syrup and garlic. Cover and set aside until ready to use.
2 In a small saucepan, combine remaining ¼ cup (60 mL) maple syrup with apple cider vinegar, soy sauce and smoked paprika. Bring to a gentle simmer over medium heat and cook until slightly thickened and glossy, about 3 to 5 min. Remove from heat and set aside until ready to use.
3Shuck the corn and trim the ends. Stand each cob upright on a cutting board and carefully cut in half lengthwise. Cut each half lengthwise again to create 4 “ribs” per cob of corn. Transfer the corn ribs to a large bowl and toss with the canola oil and kosher salt.
4Place the corn ribs cut-side down on the grill. Grill, turning every 2 to 3 mins, until curled, lightly charred and tender, 10 to 12 mins. Brush corn ribs with the maple glaze, coating lightly. Continue grilling for 1 min. to set the glaze without burning. Remove from the grill and transfer to a mixing bowl.
5 Toss the grilled maple glazed corn ribs with half of the miso butter, so the butter melts and coats the grilled maple corn ribs. Transfer the ribs to a family-style platter. Dollop with the remaining miso butter. Garnish with the finely sliced scallions and sesame seeds. Serve.
Tips
1
Corn ribs can be cooked in the oven. Roast at 425°F (220°C) for 25 to 30 min., turning once. Glaze and return to the oven for 2 min. to set the glaze.
