Ingredients

  • 3 tbsp (45 mL) fresh lemon juice
  • 3 tbsp (45 mL) olive oil
  • 2 tsp (10 mL) honey
  • 1/4 tsp (1 mL) salt
  • 1 bunch broccolini, ends trimmed, chopped
  • 1/2 pkg (312 g) baby spinach, chopped into approx. 1/2-in. (2 cm) pieces
  • 1 cup (250 mL) lightly packed pea or alfalfa sprouts, coarsely chopped
  • 3 tbsp (45 mL) dried cranberries, coarsely chopped
  • 2 carrots, shredded
  • 1 tbsp (15 mL) chopped fresh chives
  • 1/2 pkg (62 g) crumbled goat cheese

Method

  1. In a small bowl, combine lemon juice, olive oil, honey and salt and stir well. Set aside. In a large bowl, mix together broccolini, spinach, pea or alfalfa sprouts, cranberries, carrots and chives. Toss with lemon dressing. Garnish with goat cheese crumbles and serve.
