Ingredients

  • 2-3 lemons
  • 2 tablespoons Sensations Extra Virgin 100% Olive Oil
  • 2 tablespoons Compliments Butter
  • 4 Compliments Balance Boneless Skinless Chicken Breasts
  • 1/2 teaspoon minced or chopped garlic or 1 small clove garlic, minced
  • 2 tablespoons capers, drained, optional

Method

  1. Cut 3 thin slices off one end of lemon; cut each slice in half and set aside. 
  2. Squeeze remaining lemon and measure 2 tablespoons of juice. 
  3. In a large skillet over medium high heat, heat olive oil and butter until melted. 
  4. Add chicken, sprinkle with salt and pepper and cook for 5 minutes. 
  5. Turn chicken and cook 5 more minutes or until cooked through.
  6. Remove chicken and place on plate. 
  7. Add lemon juice, lemon slices, garlic and capers to drippings in pan. Cook stirring for 2 minutes. 
  8. Spoon over chicken and serve.
