Ingredients

  • 1/2 cup (125 mL) canola oil
  • 1/2 cup (125 mL) Sensations by Compliments 100% Canadian Maple Syrup
  • 1/4 cup (60 mL) coconut oil, melted
  • 1 tsp (5 mL) vanilla extract
  • 3 tbsp (45 mL) packed brown sugar
  • 1 tsp (5 mL) ground cardamom
  • 1/2 tsp (2 mL) ground cinnamon
  • pinch salt
  • 3 cups (750 mL) Compliments Old Fashioned Rolled Oats
  • 1 bag (100 g) Compliments Chopped Pecans (approx.1 cup/250 mL)
  • 3/4 cup (175 mL) unsweetened desiccated coconut

Method

  1. Line a baking sheet with parchment paper. Preheat oven to 300˚F (150˚C). In large bowl, combine canola oil, maple syrup, coconut oil and vanilla. Whisk in brown sugar, cardamom, cinnamon and salt. Add rolled oats, pecans and coconut; tossing to coat. Spread mixture on lined baking sheet. 
  2. Bake 30 to 40 min., stirring every 10 min., or until golden and crisp. Cool completely. Store in airtight container.

Tips:
• Add 1 cup (250 mL) chopped dried fruit, such as raisins, dates, apricots or cranberries.
• Layer granola with Greek yogourt and fresh fruit such as mango for a breakfast parfait.
