Ingredients

  • 1 cup (250 mL) finely chopped hazelnuts
  • 1/2 cup (125 mL) sunflower seeds
  • 1/3 cup (75 mL) flax seeds
  • 1/3 cup (75 mL) hemp seeds
  • 1/3 cup (75 mL) sesame seeds
  • 1/2 cup (125 mL) peanut butter (or other seed or nut butter)
  • 1/4 cup (60 mL) maple syrup
  • 1/2 tsp (2 mL) vanilla extract
  • pinch of salt
  • 1 cup (250 mL) shredded unsweetened coconut

Method

  1. Line large baking sheet with parchment paper. In large bowl, mix together hazelnuts, sunflower seeds, flax seeds, hemp seeds, sesame seeds, peanut butter, maple syrup, vanilla and salt until blended. In a separate small bowl, pour in the shredded coconut. 
  2. Roll the seed mixture into thirty 1-in. (2.5-cm) diameter balls; toss in coconut to coat. Place bites on prepared baking sheet. Chill 1 hr., or until firm. Store refrigerated in airtight container up to 3 days or freeze for up to 1 month.

Tips:
• If mixture is too sticky, wet hands lightly before rolling into balls.
• Try adding chopped dried fruits, such as apricots, cherries and plums.
