To make your own lemon curd: heat ⅓ cup sugar, ⅓ cup fresh lemon juice, 2 tsp lemon zest, and 2 large eggs over low heat in a small saucepan. Slowly whisk in ¼ cup of room-temperature butter (cut into cubes), and whisk continuously for 6-8 min. Once the first bubble appears on the surface of the curd and it is thick enough to hold marks with the whisk, take it off the heat. Strain curd through a fine-mesh strainer and chill completely.
