Let it sit at room temperature for about 30 minutes. Add the brie to the food processor and blend for 3 -4 minutes. Add 3 tbsp of heavy cream and whip until fluffy, for about 1 minute. Spread the whipped brie on a platter and top with 2 tbsp of fig jam, 4 slices of salami, diced, 2 slices of prosciutto torn into pieces, 2 tbsp chopped kalamata olives, 2 tbsp sliced pickles, and 2 tbsp chopped pecans. Finish with a drizzle of 2 tbsp honey, and 2 sprigs of rosemary. Serve with crackers and crisps.
