Watermelon Mint Pops


  1. 1/4 cup (60 mL) liquid honey
  2. 1 mint tea bag
  3. 4 cups (1 L) coarsely chopped seeded watermelon
  4. 1 cup (250 mL) full-fat plain Greek yogourt
  5. 1/4 cup (60 mL) whole fresh mint leaves


  1. In large heatproof bowl or jug, combine 1 cup (250 mL) boiling water, honey and tea bag. Steep 5 min. Discard tea bag. Stir mixture to dissolve honey. Set aside.
  2. In blender, combine watermelon, yogourt, mint leaves and tea mixture. Process on high until smooth. Pour into pop moulds and freeze 4 hr. until firm or overnight.
