Ingredients

eggs, beaten
1/4 cup
all-purpose flour

1/4 cup
butter, melted
60 mL
2 tbsp
finely chopped fresh sage

cloves garlic, minced
1/4 tsp
each salt and pepper
1 bag
Compliments Hash Brown Fried Potatoes, thawed
1 kg
1/2 cup
grated Parmigiano Reggiano cheese
125 mL
2 tbsp
chives
30 mL

Method

Step 1

In large bowl, whisk together melted eggs, flour, butter, sage, garlic, salt and pepper. Add hash brown potatoes and cheese; toss to coat.

Step 2

Preheat waffle iron according to manufacturer’s instructions. Making one waffle at a time, place one scant cup of potato mixture onto to waffle iron. Close lid; cook 4 to 5 min., or until hash browns are golden brown and crisp. Make about 8 waffles. Garnish with chives and a dollop of sour cream, if desired.

Tips

Keep waffles warm in low oven.
Serve as a brunch topped with poached egg, a dollop of cream cheese, smoked salmon and dill.
