Turkey Hash

  1. 4 cups Potatoes O’Brien or frozen diced potato with onion
  2. 3 tablespoons Sensations Extra Virgin 100% Olive Oil
  3. 2 teaspoons minced Compliments Organic Fresh Rosemary
  4. Salt and freshly ground pepper
  5. 11/4 pounds ground turkey
  6. 2-3 cups Baby Spinach, rinsed and patted very dry
  7. hot, steamed Sensations Calrose Rice


  1. In a 12-inch nonstick frying pan over high heat, combine frozen potatoes, olive oil, rosemary, and salt and pepper to taste. 
  2. Cook, turning mixture over with a spatula occasionally, until potatoes are golden browned, 8-10 minutes.
  3. Add turkey to pan and break meat into bite-sized pieces as it browns.
  4. Cook until turkey is no longer pink, about 3 minutes. 
  5. Add spinach and stir until spinach is just wilted and liquid evaporates, about 1 minute.
  6. Serve hash immediately over steamed rice.
Healthier Alternative: Use steamed brown rice instead of white for an easy way to boost your fiber.
