Turkey & Cheddar Cheese Muffins

Ingredients

  1. 1 cup (250 mL) whole-wheat flour
  2. 3/4 cup (175 mL) all-purpose flour
  3. 1 tbsp (15 mL) baking powder
  4. 1/2 tsp (2 mL) each salt and pepper
  5. 1 1/2 cups (375 mL) milk, room temperature
  6. 1 tbsp (15 mL) honey
  7. 2 tsp (10 mL) Sensations by Compliments Whole Grain Dijon Mustard
  8. 1/2 tsp (2 mL) chopped garlic
  9. 1 egg, room temperature
  10. 1/3 cup (75 mL) unsalted butter, melted
  11. 1 cup (250 mL) Sensations by Compliments Triple Cheddar Shredded Cheese Blend
  12. 6 slices Compliments Naturally Simple Turkey Breast Oven Roast, chopped
  13. 1/4 cup (60 mL) grated Sensations by Compliments Parmigiano Reggiano
  14. 1/4 cup (60 mL) Compliments Sunflower Seeds Roasted No Salt

Method

  1. Preheat oven to 190°C (375°F). In large bowl, whisk together whole- wheat flour, all-purpose flour, baking powder, salt and pepper. In another bowl, whisk together milk, honey, Dijon, garlic and egg, then whisk in melted butter.
  2. Pour wet ingredients into dry ingredients; fold mixture until just moistened; then fold in Cheddar cheese and turkey. Divide batter into 12 greased muffin tins. Sprinkle batter with Parmesan cheese and sunflower seeds.
  3. Bake 25 min., until muffins are golden and tops spring back when lightly pressed. Transfer muffin pan to wire rack to cool slightly before tipping out muffins. Serve warm or at room temperature.
Tip:
Try diced ham instead of turkey and swap in Swiss cheese for the Cheddar.
