Panseared Tuna Rice Cakes

  1. 31/2 tablespoons Sensations Extra Virgin 100% Olive Oil
  2. 1 small onion, chopped
  3. 2 cups cooked, cooled Medium-Grain Rice
  4. 1 large can (12 ounces) Sensations Albacore Tuna in Water, drained
  5. 2 Compliments Large Eggs, well beaten
  6. 1/2 cup Compliments Complete Buttermilk Pancake Mix
  7. 1/2 cup Compliments Shredded Parmesan Cheese
  8. 2 tablespoons minced Compliments Organics Chives
  9. freshly ground pepper
  10. Compliments Tartar Sauce (optional)


  1. In a 12-inch nonstick frying pan, combine 1/2 tablespoon oil and the onion over medium high heat. Stir often until onion is lightly browned, 5-6 minutes.
  2. Spoon onion into a large bowl.Add rice, tuna, eggs, pancake mix, cheese, and chives to bowl. Add pepper to taste. 
  3. Mix gently until well blended. Divide mixture into 8 or 9 equal portions. Shape each portion into a patty about 3/4-inch thick.
  4. Add half the remaining oil to frying pan and half the patties. Cook over medium high heat until undersides are well browned, 2-3 minutes.
  5. With a spatula, carefully turn patties over and cook to brown other sides, 2-3 more minutes. Transfer to a serving platter and keep warm. 
  6. Repeat to cook remaining cakes in remaining oil. Serve warm with tartar sauce if desired.
