California Tuna Melts

  1. 3 cans (5 ounces each) Sensations Solid White Albacore Tuna in Water, drained
  2. 1/3 cup Compliments Mayonnaise
  3. 2 teaspoons fresh lemon juice
  4. 1/2-1 teaspoon finely grated and minced lemon peel (yellow part only)
  5. 8 slices sourdough bread
  6. 1 large firm-ripe tomato, cored and thinly sliced
  7. 1 firm-ripe avocado, peeled, pitted and sliced
  8. 4 ounces Best Buy Cheddar cheese, thinly sliced
  9. 3 tablespoons Compliments Butter


  1. In a bowl, mix together tuna, mayonnaise, lemon juice, and lemon peel.
  2. Lay 4 bread slices out on a work surface. Spread equally with the tuna mixture. Top with equal portions of tomato, avocado, and cheese. 
  3. Top with remaining bread slices.
  4. Melt half the butter in a large nonstick frying pan or on a nonstick griddle, over medium-high heat. 
  5. Add sandwiches and cook until undersides are golden brown, 3-4 minutes. 
  6. Add remaining butter to pan and allow to melt. Turn sandwiches over and cook until other sides are browned and cheese is melted, 2-3 more minutes; watch carefully to avoid burning.
  7. Transfer sandwiches to plates, cut in half, and serve immediately.
Healthier Alternative: For a leaner version, use Compliments Light Mayonnaise instead of regular.
