Spiced Tri-Tip with Blue-Cheese Chipotle Sauce

  • 1 beef loin roast, trimmed (about 2 2/3 pounds)
  • 1 tablespoon Sensations Extra Virgin 100% Olive Oil
  • 3 tablespoons Compliments Steak Spice
  • 3/4 cup blue cheese salad dressing, refrigerated
  • 1/4 cup Lucerne® Half-and-Half
  • 1 or 2 chiles from can of chipotle chiles in adobo sauce


  1. Prepare a gas or charcoal barbecue for medium-high heat. 
  2. Rub beef all over with olive oil and then steak rub. 
  3. Place meat on grill; close lid. 
  4. Cook turning often, until meat is cooked to your liking (cut to test or use a meat thermometer in center of thickest part), 25-30 minutes and 120° for rare. 
  5. Remove meat from heat and transfer to a platter; cover lightly with foil and let stand 5 minutes.
  6. While meat cooks, combine salad dressing and half-and-half in a blender or food processor. 
  7. Wearing gloves to protect your hands, cut out and discard chile stem(s) and seeds. (Use 2 chiles if you like your sauce really spicy.) 
  8. Add chile to blender and whirl until sauce is smooth. 
  9. Transfer to a small serving bowl.
  10. To serve, thinly slice meat across the grain. 
  11. Offer sauce to drizzle over meat to taste. 

For a healthier sauce option, use a Blue Cheese Yogurt Dressing and Lucerne® Low Fat Milk instead of blue cheese salad dressing and half and half.
