Toasted Honey & Buckwheat Bark

Ingredients

  1. ¼ cup (60 mL) honey
  2. 3 tbsp (45 mL) unsweetened applesauce
  3. 2 tbsp (30 mL) almond butter
  4. 2 tsp (10 mL) coconut oil, melted
  5. 1 tsp (5 mL) vanilla extract
  6. 1 cup (250 mL) buckwheat groats
  7. ½ cup ( 125 mL) chopped almonds
  8. ½ cup (125 mL) roasted unsalted sunflower seeds
  9. ¼ cup (60 mL) chia seeds
  10. ¼ tsp (1 mL) salt

Method

  1. Preheat oven to 300°F (150°C). In large bowl, whisk together honey with applesauce, almond butter, coconut oil and vanilla. Add buckwheat groats, almonds, sunflower seeds, chia seeds and salt; mix until well coated.
  2. Press mixture into thin layer on parchment paper-lined baking sheet. Bake 25 to 30 min. or until groats are golden brown. Mixture will still be soft and sticky but crisps as it cools. Cool completely on baking sheet. Break up bark into pieces to serve.
Tip:
Serve bark as a snack, on yogourt for breakfast or sprinkle over salads containing fruit.
